In the dining room, Côté Cuisine, and in the music room, Côté Bellecour, the hotel offers menus with a true "home" touch. Dishes are created and prepared by the chefs and students of the Institut Paul Bocuse using quality products from select suppliers at the central food market, the Halles Paul Bocuse, and regional specialty products.
In 1893 Prosper Perrin was commissioned to design a grand hotel on Place Bellecour. Between 2003 and 2007 it underwent complete renovation by Pierre-Yves Rochon. Working on the concept of a Lyon residence in which tradition and modernity mix and mingle, he created a decor in harmonies of blue, the colour of royalty, and red, for a touch of boldness. Displayed throughout are souvenirs, collector\'s pieces, photos and family portraits.
